For the Love of Leftovers
Hey friends Thank you for all of the wonderful comments after yesterdays post! It’s great to know that I am not the only one who deals with “fear” or “forbidden” foods. And thank you to all of you who shared similar experiences; it’s always comforting to hear about what others have gone through when dealing with ED.
After writing my post yesterday, I was wasting some time on Twitter and found a beautiful quote that I have to share with you!

This quote totally relates to yesterdays post and I found it extremely ironic how I came across it immediately after I published my post. So, I knew I had to share it with all of you today The quote is so true, especially if you consider the said “rules” to be “ED’s rules”.
When has following any of ED’s rules ever gotten you to a good place?
Following ED’s rules only leads to a life full of darkness, loneliness, and hate. So, if we disobey ED’s rules we will be able to enjoy the wonderful life God blessed us with

Even though Christmas has come and gone, one thing still remains…
Personally, I love leftovers. When I’m living in London, I make huge batches of chicken breasts, turkey muffins, tilapia, etc. all at once, so I am able to have a quick meal in between studying and everything else that comes along with being a busy university student. Since I make large batches of one type of dish at a time, I find myself eating the same thing such as chicken breasts over and over; however, it doesn’t phase me at all. I love leftovers. I think it’s fun and I always try to create something new with the same thing Therefore, I am thoroughly enjoying all of this leftover turkey You will never hear me saying “I’ve had enough turkey until next Christmas” or something of the sort.
One of my favourite ways to enjoy leftover turkey or chicken is to create a monster salad Salads are so versatile, so even if you have a salad for lunch and dinner they can be completely different from one another.
Yesterday for lunch I made myself a monster salad with the leftover Christmas chicken (we did two huge chickens on Boxing day instead of turkey)
(romaine, quinoa, cucumber, tomatoes, red onion, fresh dill, avocado, and chicken)
My salad got so big I had to pull out one of my Mom’s pottery bowls that we use for serving side dishes in!

This salad was so good that I had to make another for dinner. I could have been creative and made it different, but my salad at lunch was way too tasty to mess around with So, dinner looked pretty much the same…
All of the same deliciousness went into this salad, except I made one of my favourite homemade salad dressings to drizzle on top
Whole Grain Mustard Vinaigrette
2 tsp whole grain mustard
1 TBSP olive oil
2 tsp white wine vinegar
Stir all together and you got yourself a tasty dressing for any salad! So good. And so easy!
Today, I thought I’d change things up a little for my lunch, but I still used the leftover chicken of course!
Alright, so I still had a salad, but a Mexican type of salad
Turkey Taco Salad
2 – 3 cup romaine, chopped
6 oz. cooked turkey breast, cubed
1 small tomato, diced
1/2 cup black beans (I used canned and drained them well)
1/4 – 1/2 avocado, sliced
2 scoops (1 big spoonful’s) greek yogurt
2 TBSP green onion, diced
1 tortilla (I baked my tortilla in the oven at 400 degrees F until crispy)
Arrange salad in a bowl big enough to fit all of the ingredients and enjoy!
Sometimes, I will even add jalapeño’s to this salad, but today I wasn’t feeling them…
Lunch was delicious, but I think dinner beat all of the above meals…
Don’t get me wrong – I love my salads, but take a look at this soup I made!
Once again, turkey was the star of this meal
Meg’s Leftover Turkey Soup
1 tsp olive oil
1 celery stalk, diced
1/2 cup diced carrots
2 TBSP diced onion
2 cups water
2 tsp chicken bouillon concentrate (Bovril brand)
Mrs. Dash Original (just a dash )
6 oz. cooked turkey breast, cubed or shredded
1/2 brown and wild rice
1 handful chopped fresh dill
Begin by sautéing celery, carrots, and onion in olive oil over low heat. Meanwhile, bring water to a boil in a small pot. Add turkey, rice, and bouillon once water comes to a boil. Season with Mrs. Dash.
Once onions are translucent, transfer vegetables to pot. Let simmer. Test broth and adjust accordingly (I didn’t make any changes – I thought it was perfect!) A few minutes before serving, add dill. Serve warm and enjoy
